Chicken Pad Thai
A simplified home version: tangy tamarind, sweet-salty sauce, egg, crunchy peanuts and lime. No mirin, sake or sesame oil needed.

Soak or boil the noodles per the packet’s stir-fry instructions — stop while they still have a little bite. 1Noodles first

- Drain well and use promptly; they’ll finish cooking in the sauce.
- Avoid fully softening them beforehand or aggressively stirring them in the pan.

- Slice the chicken.
- Chop the garlic; slice the spring onion whites and cut the greens into short lengths.
- Crush the peanuts, cut the lime into wedges.
- Stir the sauce until the sugar dissolves:
- tamarind purée 1½ tbsp
- fish sauce 1 tbsp
- brown or palm sugar 1 tbsp
- warm water 2 tbsp

- Fry the chicken until cooked through.
- Add garlic and spring onion whites for the final 30 seconds, then transfer to a clean plate.

Noodles and sauce in, then fold gently until the sauce is mostly absorbed. 5Noodles and sauce

- Gently fold over medium-high heat until the noodles are tender and most of the sauce is absorbed.
- Add a little more water if necessary.
